Lez Posted April 8, 2011 Report Share Posted April 8, 2011 Hello Everyone i'm a new member Joined a couple of days ago, Hope you're All keeping Well:) one of my favourites is Wood Pigeon Cacciatore (Cacciatore= Hunter in Italian) but other meat can be used (off the bone) 4 to 6 Wood Pigeon Breasts Sunflower oil as many cloves of Garlic that you like - opt -i use loads in everything 2 Med onions- finely sliced 1 Grated Carrot 1 Red pepper - de-seeded and chopped into 1/2"-ish bits 1 Green Pepper- de-seeded and chopped into 1/2"-ish bits 2 tins chopped tomatoes 3/4lb Mushrooms - open cup or button - upto you 1 or 2 Chick stock cubes 5ml spoon of sugar -Opt Hot chilli powder to you're taste (I likes it Hot!) Italian herbs 1 or 2 Tbl spoons Glass or few of good dry white wine Tbl spoon of Tomato puree, If it needs thickening use corn flour or arrow root, large sauce pan, Add oil -Enough to cover Btm of Pan Add - Onions, Peppers and grated carrot Put pan lid on and fry on Medium heat until they soften (Don't forget to stir often) When soft enough Add Chopped Tomatoes, Sugar, Stock cubes, Herbs and Mushrooms then stir till it bubbles-Then Add The Chilli powder and let it all simmer for 15ish mins with the lid on Add the Wine and back to simmer for 10mins - lid on when this is done Turn off the heat and prep Woodies breasts When you've done the above breasts turn heat back on and drop in the meat and simmer again for 20ish mins Cooked We have this with batsami rice or linguine and it's Beautiful if you do try this don't forget to put the rice on in good time but you could have it with pasta or Spaghetti Luvely Grub Kind regards to All, Les Link to comment Share on other sites More sharing options...

I may be a bit thick, but, I got a bit lost towards the end of the recipe: would you be kind to add some detail on the bit about 'prepare the breasts'? do you pan fry them lightly and then add to the sauce, or do you just add them to the mixture raw for a few minutes and cook the lot together? best wishes, Finman Link to comment Share on other sites More sharing options...
