What many don't realise is that Floyd was a countryman at heart and was never happier than when he was mid stream with a fly rod in hand. An enthusistic eater of game and promoter of game recipes, he will be sadly missed. The young pretenders may have glossier programs, better resources and undoubtedly better business sense but Floyd had pretty much done it all before they got on the scene. Heres to Keith and a recipe that he would undoubtedly have approved as it has no water and plenty of booze! Venison casserole with Sherry. Take about 2lbs of venison (I used neck but any of the less favoured cuts will do) and cut into large cubes. Brown in a large saucepan in batches and set aside. Take two large onions and roughly chop, fry off for a couple of mins until just coloured. Place these in a large heavy casserole (1 gallon le creuset is ideal). On top of the onions place a whole bunch of curly parsley which has been torn roughly into pieces. Then place the browned meat onto this bed of veg. Next, deglaze the browning pan with 1/2 bottle of fino sherry and 1/2 bottle of white wine and simmer for a few moments to allow some alcohol to evaporate. Pour the mixture over the meat and veg as soon as all the browning has come away into the liquid. Add a bouquet garni, 6-8 very ripe chopped tomatoes (or a tin if you're really desperate) 2 beef stock cubes, and a good grinding of balck pepper. Add around 1lb of small new potatoes. Put the lid on the casserole and place in a moderate oven for around 2hrs or until the meat is tender. Retire with a large glass of red wine ala KF. Cheers! Gareth The fino and wine give this dish a very good flavour and may work well with some of the stronger and tougher beasts one occasionally encounters in the bottom of the freezer.
