dylan5588 Posted November 14, 2013 Report Share Posted November 14, 2013 225g Blackberries 225g Rowan berries 450g jam sugar Juice from 2 lemons Wash fruit and cook gently in 200ml water for 20 to 30 minutes, mash the berries to extract as much juice as possible, strain liquid through a muslin strainer, do not force it through, allow to drain through, Add the sugar and lemon juice to the liquid, return to the heat and warm until sugar is completely dissolved, now boil rapidly for about 15 minutes or until setting point is reached, a good test for this is, drip some liquid on a chilled saucer, drag a spoon through it, if a skin has formed and wrinkles, setting point has been reached. Now pour into pre heated sterilised jars and seal. This jelly is really good with any game meat, especially Venison, or just a nice change from marmalade on your toast for breakfast!! Oh I forgot to mention, its best not to use expanding ammunition when out shooting the berries, as they cause too much fruit wastage!!!!!!!!
