Will these take a 56mm scope and leave 2mm clearance?

There are many variables to consider when looking at mounts and clearance. The action, rail, barrel profile, scope profile, etc. It’s hard to answer your question unfortunately. 
there is a formula that can be used to help guide the height of mounts.
