What would be the typical cost of rebarrelling .223 AR15 type straightpull with a good quality sporter profile barrel.  See there are off the shelf barrel options available in the UK, in the US it seems to be a DIY mechanical job, how do they adjust headspace and such like ?

Off-the-shelf barrels will only be in the common profiles probably a military profile or HBar or something else unsuitable to your needs. If you want something unique or different (as most shooters do) then it will need profiling to your requirements. Takes time and this adds to the cost.

If you do want one of the standard barrels fitting is not too hard as a DIY job as long as you can hold the barrel or receiver without distorting the receiver when tightening the barrel nut. Getting hold of one as far as FAC goes may be the biggest issue.

Headspace is usually done to a standard bolt and is set to the barrel by the barrel extension which should come with the barrel. They are designed to be fairly interchangeable so no real issues. If you have one cut it can be headspaced to your bolt but it'll not be much different to the standard chamber, unless you want it more specific for a particular chamber/cartridge/bullet fit (not usually a requirement on ARs generally).
