Mike Robinson's Munty meatballs

ok I don't have muntjac up here nor have I tried it but would love to...

 

used roe instead

 

been watching Mike Robinson's vid's on youtube... 1st part usually grassing summit , then 2nd episode the culinary bit... bloody good wee vids

 

new York style meat balls

 

took some muntjac mince in a pot,

added small tub of parmesan & similar sized tub of ricotta cheese

good size dash of salt & pepper then mix well

think he threw bit of basil in there too

added an egg for binding then made the mix into tennis ball size meatballs (can do smaller if you prefer)

 

then place back in pot you just mixed in

add a jar of passata then bring to a wee simmer then lid on & simmer for 25 minutes or so

didn't brown them , he said don't neeed to, they looked a bit "pale"

had with some pasta

 

was brilliant!!
