However, things as usual didn't go to plan so burgers were on the menu.. 2lbs Roe Mince 1/2 onion very finely chopped 2tsp dried parsley 2tsp roughly ground coriander seed 2tsp salt or to taste 1tsp hot paprika 1/2tsp ground black pepper 1tsp dried basil 2tsp ground fenugreek 1/2tsp dried sage Combine all the ingredients in a large bowl and mix well. Get your hands in there as you'll not be able to do this with a spoon. Make sure all the ingredients are well mixed. The Fenugreek is an aquired taste. However, it does work very well with these burgers so it may be as well to aquire it... Once the ingredients a re well mixed form them into burger shapes either with your hands so that they look like random amoeba (my choice!) or in a burger press to around 1/2inch thick. Fry them in the oil/fat of your choice and how you like them i.e. they can be as pink or as well done as you like. You shot the beast so you should be confident of the meat quality.. That's it. Serve them in buns or with anything else you care to dish up. Ours were with Pasta and a quality Barossa. Sterling. Enjoy! G Link to comment Share on other sites More sharing options...
